Veggie Taco Cups

If you are looking for a super easy appetizer for your football watch party that involves minimal prepping, this recipe for you! Just layer store-bought ingredients into chip scoops. Elevate it with fresh cilantro and a squeeze of lime for a fresh, citrus kick. It's the perfect bite!

Prepping Tips:
  • Drain the black beans, corn, and pico de gallo well to prevent sogginess.
  • Let the guests squeeze lime over their own scoops to also prevent sogginess.
  • The weight of the listed ingredients is based on what was available at my local grocery store. Just purchase whatever you have at yours.
  • The chip scoops are small. Be sure to add ingredients in very small amounts. They will fill up quickly!
  • Save leftover ingredients for nachos or tacos later in the week.

Ingredients
  • 8 oz bag of chip scoops
  • 12 oz container of guacamole
  • 12 oz container of salsa
  • 15 oz can of black beans, drained and rinsed
  • 15 oz can of corn, drained and rinsed
  • 12 oz container of pico de gallo, drained
  • 1/4 bunch of cilantro, roughly chopped
  • 4 limes, cut into wedges
Instructions
  1. ​Put whole, unbroken chip scoops onto a serving plate.
  2. Warm the black beans and corn over stovetop or in the microwave.
  3. With a small spoon, layer ingredients in the following order into each chip scoop:
    -Guacamole
    -Salsa
    -Black beans
    -Corn
    -Pico de gallo
  4. Sprinkle chopped cilantro over all the chip scoops and serve with lime wedges.
  5. Enjoy!
